Doomsday Prepper Starter Kit

Supposedly we're due for a big earthquake in the next several years here on the west coast. Some might say I'm neurotic, maybe a little OCD. Hi, mom. However, it's never too early to be prepared. Or at least that's what my over-thinking brain tells me.
All the necessities. Like Perrier. And our dog. Who is wondering what is wrong with me.

P.S.-Top Ramen might be the most perfect Prepper food EVER! Lots of calories and it never expires. Thanks Costco.

Recipe Monday

Who doesn't love a huge piece of cheese pizza? I mean c'mon. Cheesy carb-y and melty. YES PLEASE. Behold my recipe for your own <large> slice.

Ingredients:
1 car with gas 
1 Costco membership
$1.50

Directions:
Pay your $ and stuff 'yo face in the car like a real savage.

Healthier Nachos

Growing up my mom was such a health nut. All I wanted was Kraft Mac & Cheese and Capri Suns. And remember those squeezy juice things that you twisted the top off of? What were they called? Can't a girl get some high fructose corn syrup up in here?!

My mom always said one day I would thank her for healthy eating habits. Thanks mom.

In that spirit and the general nacho-loving spirit I made these. Same salty crunchy satisfaction as the traditional kind, but slightly healthier. Win-win.

Ingredients:
About 20 baked blue corn chips
1/2 cup reduced fat mozzarella cheese
1/2 cup shredded carrots
1/4 cup guacamole or half of a chopped avocado
1/4 cup salsa
1/2 cup garbanzo beans (optional, great for extra fiber!)

Place chips in bowl or on a plate and melt the cheese in your oven broiler until just melted. Then top with other ingredients & enjoy!
